Cedar Plank Tilapia With Tomato Caper Relish
- 20 ounces tilapia fillets
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic
- 1 cup tomatoes, finely diced
- 2 tablespoons capers
- 2 tablespoons basil, chopped
- Preheat oven to 375F Put an 11x17 inch untreated cedar plan in the oven to heat.
- Sprinkle the seasonings over one side of the fish.
- Place the fish, spice side up, on the plank.
- Bake the fish for 15 minutes, or until it pulls apart.
- To make the relish, in a bowl, combine the tomato, capers and basil.
- Mix well and season to taste with salt and pepper.
