Chicken and Wild Mushroom Stew
- 1 lb chicken breast, boneless skinless cubed
- 12 cup chicken broth
- 12 cup white wine
- 8 ounces mixed wild mushrooms, chopped
- 14 cup thinly sliced green onion
- 14 cup sliced leek
- 1 tablespoon drained capers
- 1 bay leaf
- 1 -2 tablespoon cornstarch
- 2 -4 tablespoons cold water
- salt and pepper
- 8 ounces cooked spaghetti, cooked
- Combine all ingredients except cornstarch, water, salt, pepper and spaghetti, in slow cooker; cover and cook on high for 4-6 hours.
- Stir in combined cornstarch and water, stirring 2-3 minutes.
- Discard bay leaf; season to taste with salt and pepper.
- Serve over spaghetti.
