Spiced Apple And Red Pepper Jelly

  1. PUREE sweet red peppers in a food processor or blender.
  2. Line a strainer or colander with cheesecloth.
  3. Strain enough juice to make 1 1/4 cups.
  4. COMBINE pepper juice, pepper flakes, apple juice, vinegar, sugar, cinnamon and lemon in saucepan.
  5. Bring to a full boil.
  6. IMMEDIATELY stir in liquid fruit pectin.
  7. BRING to a full rolling boil and boil hard 1 minute, stirring constantly.
  8. Remove from heat and skim off foam.
  9. USING sterilized tongs, carefully place one of the cinnamon sticks and a strip of lemon in each warm sterilized jars.
  10. POUR hot jelly quickly into warm jars filling up to 1/4 inch from rim.
  11. SEAL while hot with sterilized 2-piece lids with new centres.
