Spiced Apple And Red Pepper Jelly
- 4 cups chopped sweet red peppers
- 2 tsp. dried crushed chili pepper flakes
- 1 cup apple juice
- 1/2 cup Heinz Apple Cider Vinegar
- 6 cups granulated sugar
- 6 cinnamon sticks
- 6 thin slices fresh lemon Safeway 4 ct For $5.00 thru 02/09
- 2 pouches Certo Liquid Pectin
- PUREE sweet red peppers in a food processor or blender.
- Line a strainer or colander with cheesecloth.
- Strain enough juice to make 1 1/4 cups.
- COMBINE pepper juice, pepper flakes, apple juice, vinegar, sugar, cinnamon and lemon in saucepan.
- Bring to a full boil.
- IMMEDIATELY stir in liquid fruit pectin.
- BRING to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat and skim off foam.
- USING sterilized tongs, carefully place one of the cinnamon sticks and a strip of lemon in each warm sterilized jars.
- POUR hot jelly quickly into warm jars filling up to 1/4 inch from rim.
- SEAL while hot with sterilized 2-piece lids with new centres.
