Easy Lemon Bars Recipe

• 1 pkg. lemon cake mix
• 3 Large eggs
• 1/3 c. shortening or possibly butter
• 1/2 c. sugar
• 1/2 teaspoon baking pwdr
• 1/4 teaspoon salt
• 2 teaspoon grated lemon peel
• 1/4 c. lemon juice

1. Preheat oven to 350 degrees.
2. Combine 1 egg, shortening, and dry cake mix till crumbly; reserve 1 c.. Pat remaining mix lightly in an ungreased 9"x13"x2" pan.
3. Bake at 350 degrees for 15 min or possibly till lightly browned.
4. Beat remaining 2 Large eggs, sugar, baking pwdr and salt, lemon peel and lemon juice till light and foamy.
5. Pour over warm crust; sprinkle with reserved crumb mix.
6. Bake at 350 degrees for 15 min or possibly till lightly brown.
7. Sprinkle with confectioners' sugar.
8. Cold.
9. Cut into bars, 2" x 1 1/2".
10. 32 servings.
