Easy Lemon Bars Recipe
- 1 pkg. lemon cake mix
- 3 Large eggs
- 1/3 c. shortening or possibly butter
- 1/2 c. sugar
- 1/2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 2 teaspoon grated lemon peel
- 1/4 c. lemon juice
- Preheat oven to 350 degrees.
- Combine 1 egg, shortening, and dry cake mix till crumbly; reserve 1 c.. Pat remaining mix lightly in an ungreased 9"x13"x2" pan.
- Bake at 350 degrees for 15 min or possibly till lightly browned.
- Beat remaining 2 Large eggs, sugar, baking pwdr and salt, lemon peel and lemon juice till light and foamy.
- Pour over warm crust; sprinkle with reserved crumb mix.
- Bake at 350 degrees for 15 min or possibly till lightly brown.
- Sprinkle with confectioners' sugar.
- Cold.
- Cut into bars, 2" x 1 1/2".
- 32 servings.
