OREO-White Chocolate Irish Cream Pots de Creme
- 3 egg yolks
- 1/2 cup whipping cream
- 1/3 cup half-and-half
- 6 squares white chocolate (180 g), finely chopped
- 2 Tbsp. Irish cream liqueur
- 4 Oreo Cookies, coarsely chopped
- 6 Mini Oreo Cookies
- Whisk first 3 ingredients in saucepan until blended; cook on medium-low heat 8 to 12 min.
- or until thickened to custard-like consistency (160 degrees F), stirring constantly.
- Pour over combined chopped chocolate and liqueur in bowl; stir until chocolate is completely melted.
- Stir in chopped cookies.
- Spoon into 6 (85-mL) dessert cups.
- Cool 15 min.
- Refrigerate 3 hours or until firm.
- Top each with mini Oreo just before serving.
