Calzone
- 1 1/2 tsp. dry yeast
- 1 Tbsp. honey
- 1 c. wrist temperature water
- 2 1/2 to 3 c. flour
- Soften together yeast, honey and water.
- Add salt and flour. Knead for 10 to 15 minutes.
- Cover and set in a warm place to rise until doubled in bulk, 1 hour.
- (I usually set it on the dryer outside.)
- Punch down.
- Divide into 6 sections and roll out in rounds 1/4-inch thick.
- Fill with 1/2 to 3/4 cup filling on half of the circle, leaving a 1/2-inch rim.
- Moisten the rim with water, fold the empty side over and crimp with a fork.
- Prick it here and there.
- Bake on an oiled tray in a preheated 450u0b0 oven for 15 to 20 minutes, or until crisp and lightly browned.
- Brush each pastry with a little butter as it emerges from the oven. While the dough is rising, make the filling or if you want to make a pizza, chop up the ingredients.
