Calzone

  1. Soften together yeast, honey and water.
  2. Add salt and flour. Knead for 10 to 15 minutes.
  3. Cover and set in a warm place to rise until doubled in bulk, 1 hour.
  4. (I usually set it on the dryer outside.)
  5. Punch down.
  6. Divide into 6 sections and roll out in rounds 1/4-inch thick.
  7. Fill with 1/2 to 3/4 cup filling on half of the circle, leaving a 1/2-inch rim.
  8. Moisten the rim with water, fold the empty side over and crimp with a fork.
  9. Prick it here and there.
  10. Bake on an oiled tray in a preheated 450u0b0 oven for 15 to 20 minutes, or until crisp and lightly browned.
  11. Brush each pastry with a little butter as it emerges from the oven. While the dough is rising, make the filling or if you want to make a pizza, chop up the ingredients.
