Chicken Cole Slaw Recipe
- 2 c. shredded green cabbage
- 2 c. diced cooked chicken
- 1 c. unpeeled cubed red apple
- 1 c. seedless red grapes, halved
- 1/2 c. sliced celery
- 1/2 c. minced walnuts
- 1/2 c. lowfat sour cream
- 3 tbsp. mayonnaise
- 3 tbsp. honey
- 1 tbsp. lemon juice
- 1/8 teaspoon salt
- Dash of pepper
- Combine first 6 ingredients in a large bowl; set aside.
- Combine lowfat sour cream, mayonnaise, honey, lemon juice, salt and pepper; stir till smooth.
- Pour over chicken mix and toss gently.
- Cover and refrigerate1 to 2 hrs.
- To serve, spoon chicken cole slaw into a lettuce-lined salad bowl, if you like.
- 6 servings.
