Herbed Roast Leg Of Lamb

  1. Wipe lamb with damp paper towel.
  2. Rub surfaces of meat with lemon juice.
  3. Make several slits in meat and insert halved cloves of garlic.
  4. Spread mustard over all surfaces and sprinkle herbs over top with rosemary needles predominating, also salt.
  5. Cut onions into halves or quarters and place over meat.
  6. May use toothpicks to anchor.
  7. Preheat oven to 450u0b0 and roast 15 minutes before turning heat to 350u0b0.
  8. Roast 25 minutes per pound.
  9. Remove meat to oven platter to keep warm while preparing gravy.
