Herbed Roast Leg Of Lamb
- 1 leg of lamb
- 3 garlic cloves
- mustard
- 2 to 3 onions
- 1 full tsp. basil
- 1 full tsp. oregano
- 1 full Tbsp. or more rosemary
- salt
- lemon juice
- 1/2 c. white wine (optional)
- flour
- Wipe lamb with damp paper towel.
- Rub surfaces of meat with lemon juice.
- Make several slits in meat and insert halved cloves of garlic.
- Spread mustard over all surfaces and sprinkle herbs over top with rosemary needles predominating, also salt.
- Cut onions into halves or quarters and place over meat.
- May use toothpicks to anchor.
- Preheat oven to 450u0b0 and roast 15 minutes before turning heat to 350u0b0.
- Roast 25 minutes per pound.
- Remove meat to oven platter to keep warm while preparing gravy.
