Chocolate Covered Cherries
- 1 can condensed milk
- 4 Tbsp. margarine
- 1 Tbsp. vanilla
- 2 (1 lb.) boxes powdered sugar
- 1 qt. pecans
- 3/4 box paraffin
- 8 oz. chocolate chips
- 16 oz. bottle cherries
- Drain cherries.
- Mix milk, margarine and vanilla.
- Add sugar, a small amount at a time, blending well until all sugar is used. Add nuts to mixture.
- (I use my hands to blend nuts, mixture becomes very stiff dough.)
- Pinch off enough mixture to make a small ball around 1 cherry.
- Continue until mixture is used. Place on wax paper.
- Let stand 1 hour.
- In double boiler, melt chocolate and paraffin.
- Dip each piece of candy in chocolate mixture until covered. Place on wax paper to set.
- Do not have chocolate mixture too hot.
- Makes 40 to 50 pieces.
- Keeps well.
