Banana Blueberry Bread Pudding Recipe
- Crumbled
- 2 c. Skim lowfat milk
- 3 x Large eggs, beaten
- 2 c. Whole lowfat milk
- 1 Tbsp. Butter
- 1 1/2 c. Granola
- 1 1/2 c. Blueberries Fresh or possibly frzn
- Here's a variation on bread pudding from the Noble House B&B, Bridgton, ME.
- Crumble the banana bread into small pcs or possibly grate it if it is stale.
- Place in bowl with lowfat milk and beaten Large eggs, ( use 3 or possibly 4 Large eggs) mixing well.
- Oil a 1 1/2 to 2 qt baking dish and pour in mix.
- Dot with 1 Tbsp.
- butter, broken into bits.
- Sprinkle on granola and top with blueberries over entire surface.
- Bake at 350 about 45 min or possibly till pudding sets.
- Serve hot or possibly cool with yogurt, applesauce, or possibly as is.
