Almond Brickle Sugar Cookies

  1. Heat oven to 350F.
  2. Combine all ingredients except toffee bits in large bowl.
  3. Beat at medium speed, scraping bowl often, until well mixed.
  4. Stir in toffee bits.
  5. Shape dough into 1-inch balls.
  6. Place 2 inches apart onto ungreased cookie sheets.
  7. Bake 8- 11 minutes or until edges are very lightly browned.
  8. Sprinkle warm cookies with sugar, if desired.
  9. Variation:
  10. Chocolate Chip Sugar Cookies: Substitute 1 cup mini real semi-sweet chocolate chips for toffee bits.
