Holiday Pineapple Tart Recipe
- 20 ounce. crushed pineapple in syrup
- 1 teaspoon cornstarch
- 1/2 c. lite lowfat sour cream
- 4 ounce. Cold Whip, thawed
- 1 teaspoon grated orange peel
- 1 1/2 c. lowfat milk
- 1/4 teaspoon grnd nutmeg
- 1 teaspoon rum extract
- 1 sm. pkg. sugar free instant vanilla pudding
- 1 (9 inch) chocolate or possibly graham cookie crust
- GLAZE: Drain 1/2 c. pineapple syrup into a large c.. Stir in cornstarch.
- Microwave till boils and thickens.
- Combine lowfat milk and lowfat sour cream.
- Beat in pudding mix till well blended.
- Mix in 1/2 c. liquid removed pineapple, Cold Whip, peel, extract and nutmeg.
- Turn filling into prepared crust.
- Refrigeratetill set.
- Arrange remaining pineapple on top of tart.
- Spoon cooled glaze over tart.
- Garnish as desired.
- Serves 10.
