Mexican Egg Scramble(Microwave)
- 4 to 5 slices bacon
- 1 Tbsp. margarine
- 2 Tbsp. chopped onion
- 2 Tbsp. chopped green pepper
- 8 eggs
- 2 Tbsp. water
- 1/8 tsp. garlic powder
- 1 Tbsp. chopped green chilies
- 1 Tbsp. pimento
- 3/4 c. shredded Monterey Jack cheese
- 3/4 c. shredded sharp Cheddar cheese
- guacamole and chips
- refried beans
- Microwave bacon on rack or paper towels 45 seconds per slice. Place butter, onion and green pepper in bowl and microwave 2 1/2 minutes on High.
- Beat eggs with water and garlic powder; microwave 5 minutes on Roast or Medium-high.
- Add bacon, chilies, olives and pimentos.
- Mix with cheese or place cheese on top. Cover and allow to melt.
- Serve with guacamole and chips and refried beans for an easy nutritious brunch.
