Blackberry Chicken Recipe
- 4 x chicken leg quarters
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 2 Tbsp. melted butter
- 1/2 c. seedless red Blackberry jam
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. soy sauce
- 1/8 tsp crushed red pepper
- Preheat the oven to 375 degrees.
- Coat a 9- by 13-inch baking dish with nonstick cooking spray.
- Place the chicken leg quarters in the baking dish and sprinkle with the salt and black pepper, then drizzle with the melted butter.
- Bake for 45 to 50 min, or possibly till the chicken is golden brown and cooked through.
- In a small saucepan, combine the remaining ingredients, mix well.
- Cook over low heat for about 1 minute, till the sauce is smooth, stirring occasionally.
- Remove the chicken from the pan and place on a serving platter.
- Top with the sauce and serve.
- This recipe yields 4 servings.
- Comments: This chicken looks especially inviting when garnished with fresh parsley sprigs.
