I Forgot About the Broccoli Soup

  1. Melt the butter in a saucepan, add the chopped onion and celery and saute until the onion is transluscent.
  2. Sprinkle the flour over the veggies and stir until it's incorporated.
  3. (This is optional, but it does give a little body to the soup).
  4. Add the broth, thyme, turmeric, peppercorns, bay leaf and broccoli pieces.
  5. Simmer until the broccoli is tender, about 20 minutes.
  6. Remove from heat and blend with immersion blender (or blend in batches in blender or food processor.
  7. Add the milk or cream; taste for seasoning - whether or not you might need more salt depends on how salty your broth is.
  8. If necessary, return to burner for a few minutes to heat the milk.
  9. Serve, garnished with croutons and/or shredded cheese, if desired.
