Mincemeat Drop Cookies

  1. Cream shortening; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy.
  2. Add egg, and beat well.
  3. Add mincemeat, mixing well.
  4. Combine flour, soda, and salt; stir into creamed mixture.
  5. Drop dough by teaspoonfuls onto greased cookie sheets.
  6. Bake at 350F (180C) for 16 to 18 minutes.
  7. Cool on wire racks.
