Mincemeat Drop Cookies
- 1/2 cup vegetable shortening
- 1/2 cup sugar
- 1 each eggs
- 1 cup mincemeat prepared
- 1 1/2 cups flour, all-purpose
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Cream shortening; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy.
- Add egg, and beat well.
- Add mincemeat, mixing well.
- Combine flour, soda, and salt; stir into creamed mixture.
- Drop dough by teaspoonfuls onto greased cookie sheets.
- Bake at 350F (180C) for 16 to 18 minutes.
- Cool on wire racks.
