Sesame Shrimp With Fried Rice
- 34 cup uncooked white rice
- 4 tablespoons sesame oil (divided in half)
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons teriyaki sauce
- 2 teaspoons fresh lemon juice
- 2 tablespoons soy sauce
- 2 green onions, thinly sliced
- 1 tablespoon sesame seeds
- In a medium saucepan combine rice and 1.5 cups water.
- Bring to boiling.
- Reduce heat to low; simmer, covered, 20 minutes or until rice is tender and all of the water is absorbed.
- In a large skillet heat 2 tablespoons of the sesame oil over medium-high heat.
- Add shrimp, teriyaki sauce, lemon juice, and salt and pepper to taste.
- Simmer 3-5 minutes or until shrimp are opaque.
- Remove shrimp and sauce from skillet; set aside.
- Add remaining 2 tablespoons of sesame oil to skillet.
- Add cooked rice, soy sauce, green onions and sesame seeds; cook until browned on bottom, stirring occasionally.
- Once rice sticks to bottom of skillet, loosen and turn with a spatula.
- Spoon shrimp and sauce over fried rice.
- Sprinkle with additional sesame seeds, if desired, and serve.
