Sesame Shrimp With Fried Rice

  1. In a medium saucepan combine rice and 1.5 cups water.
  2. Bring to boiling.
  3. Reduce heat to low; simmer, covered, 20 minutes or until rice is tender and all of the water is absorbed.
  4. In a large skillet heat 2 tablespoons of the sesame oil over medium-high heat.
  5. Add shrimp, teriyaki sauce, lemon juice, and salt and pepper to taste.
  6. Simmer 3-5 minutes or until shrimp are opaque.
  7. Remove shrimp and sauce from skillet; set aside.
  8. Add remaining 2 tablespoons of sesame oil to skillet.
  9. Add cooked rice, soy sauce, green onions and sesame seeds; cook until browned on bottom, stirring occasionally.
  10. Once rice sticks to bottom of skillet, loosen and turn with a spatula.
  11. Spoon shrimp and sauce over fried rice.
  12. Sprinkle with additional sesame seeds, if desired, and serve.
