Sweet and sour red cabbage slaw
- 1/2 small red cabbage
- 1 apple
- 1 piece ginger
- 1 small tin tuna in brine
- a few pickled gherkins
- 1 lime
- 3 Tbs. soy sauce
- 2 Tbs. Worcestershire sauce
- 1 tsp. soft brown sugar
- 1 large salad onion
- 1 Tbs. olive oil
- Get the ingredients together.
- Wash the fresh ingredients and peel the piece of ginger
- Finely slice the cabbage and onion and put in a large bowl
- Peel and grate the apple and ginger and add to the bowl.
- Slice the gherkins and add too
- Put the soy sauce, worcestershire sauce, olive oil and sugar in a glass.
- Squeeze lime juice in to the glass too.
- Mix well
- Add the tuna, cut up into little chunks
- Add the sauce
- And the seeds
- And mix well.
- Try for salt and pepper (I didn't use any salt, but did add some freshly ground black pepper
- Served with a baked sweet potato (baked in a hot oven for an hour), cut in two, drizzled with olive oil and sprinkled with salt and black peppers.
- Baked potatoes would also work fine.
