Slow Cooker Fiesta Chicken and Rice
- 3 pieces Boneless Skinless Chicken Breast (more Or Less, However Much Chicken You Would Like)
- 1 can (10.75 Oz. Can) Cream Of Chicken Soup, Full Fat Or Fat Free
- 1 can (14.5 Oz. Can) Corn, Drained
- 1 can (15.5 Oz. Can) Black Beans, Undrained
- 1 cup Your Favorite Salsa
- 2 Tablespoons Taco Seasoning
- 2 cups Cooked Rice (I Use Mexican Rice, You Won't Need This Till Later)
- 1 cup Fiesta Blend Or Cheddar Cheese, Or To Taste
- Place chicken breasts in the bottom of a slow cooker.
- Top with cream soup.
- On top of that add the corn, black beans, salsa, and taco seasoning.
- Stir lightly.
- Cover with the lid and cook on low for 7-8 hours or on high for 3-4 hours.
- When ready to serve, stir in your cooked rice.
- Serve with favorite toppings (sour cream, more cheese, lettuce, tomato, even Tostitos or Fritosmakes great nachos, yum).
- Enjoy!
- This heats up really well, too.
