Hummus Bi Tahini
- 1 cup dried garbanzo beans (soak overnight and drain)
- 12 cup olive oil
- 1 tablespoon olive oil
- 12 teaspoon ground cumin
- 1 pinch ground cayenne pepper
- 2 12 tablespoons lemon juice
- 1 tablespoon sesame butter (tahini)
- 2 garlic cloves
- salt
- Cook chickpeas in a saucepan at moderate heat for 1 hour or until tender.
- Drain.
- In the same saucepan, add 1 TBSP olive oil, cumin, cayenne pepper.
- Saute at high heat for 1 minute.
- Drain.
- Puree in a blender to a smooth paste.
- Add remaining ingredients and mix well.
