Hummus Bi Tahini

  1. Cook chickpeas in a saucepan at moderate heat for 1 hour or until tender.
  2. Drain.
  3. In the same saucepan, add 1 TBSP olive oil, cumin, cayenne pepper.
  4. Saute at high heat for 1 minute.
  5. Drain.
  6. Puree in a blender to a smooth paste.
  7. Add remaining ingredients and mix well.
