Christmas Tree Coffee Cake
- 1 pkg. dry yeast
- 1/4 c. warm water
- 1 (3 oz.) pkg. softened cream cheese
- 1/4 c. milk
- 1/3 c. sugar
- 2 Tbsp. ???
- 1 tsp. salt
- 1 tsp. grated orange rind
- 1/2 tsp. nutmeg
- 2 eggs
- 1 (8 oz.) can crushed pineapple, drained
- 2 1/2 to 3 c. all-purpose flour
- 2 Tbsp. maple flavored syrup
- 1 1/2 c. sifted powdered sugar
- 2 1/2 to 3 Tbsp. orange juice
- colored sugar sprinkles
- Dissolve yeast in warm water.
- Let stand 5 minutes.
- Combine next 7 ingredients in heavy saucepan.
- Cook over medium heat, stirring constantly until cheese melts.
- Cool to 105u0b0 to 115u0b0.
- Add eggs; beat 1 minute on medium speed of mixer.
- Stir in yeast mixture, pineapple and enough flour to make a soft dough.
- Turn dough out onto floured surface and knead until smooth and elastic (about 8 to 10 minutes).
- Place in well-greased bowl, turning to grease top.
- Cover and let rise in warm place (85u0b0), free from drafts 1 hour or until doubled in bulk.
