Palate Pleaser's Lentil Soup

  1. Combine broth, water, lentils and tomato in a large Dutch Oven; stir well.
  2. Bring to a boil, reduce heat, and simmer uncovered for 30 minutes.
  3. Saute onion, celery, carrot, and garlic in oil in a large skillet until the vegetables are tender.
  4. Add the sauteed vegetables to the lentil mixture.
  5. Stir well.
  6. Add tomato paste and remaining ingredients, stirring well.
  7. Bring to a boil.
  8. Cover, reduce heat, and simmer for 30 minutes or until the lentils are tender.
  9. Ladle soup into individual soup bowls.
