Glazed Chunky Apple Cake
- 2 cups sugar
- 1 12 cups vegetable oil
- 3 eggs
- 3 cups flour
- 1 teaspoon salt
- 1 12 teaspoons baking soda
- 12 teaspoon cinnamon
- 12 teaspoon nutmeg
- 12 teaspoon clove
- 3 cups of peeled diced apples (I use galas or jonathans)
- 1 cup chopped pecans
- 1 cup sugar
- 14 cup butter
- 12 teaspoon baking soda
- 2 tablespoons corn syrup
- 12 cup buttermilk
- Preheat oven to 325.
- In mixer bowl, mix sugar and oil.
- Add eggs and mix till frothy.
- Add flour, salt, soda and spices.
- Fold in apples and nuts.
- Pour into greased and floured 9x13 pan, and bake for 1 hour.
- For glaze, mix all ingredients in a small saucepan.
- Bring to a boil and boil 2 minutes.
- Punch holes in warm cake with wooden skewer, and pour glaze over holes.
- Allow to sit till glaze sets up, and serve warm or cooled.
- Refrigerate leftovers.
