Sweet And Sour Partridge
- 1/2 c. packed brown sugar
- 1 Tbsp. cornstarch
- 1/3 c. red wine vinegar
- 1/3 c. chicken broth (bouillon)
- 1/4 c. finely chopped green pepper
- 2 Tbsp. chopped pimento
- 1 Tbsp. soy sauce
- 1/4 tsp. garlic powder
- 1/4 tsp. ground ginger
- 3 to 4 partridge, filleted and cut into bite size pieces
- 1 to 1 1/2 c. flour
- salt and pepper to taste
- 1 Tbsp. oil
- 1 Tbsp. butter
- Mix flour, salt and pepper.
- Coat partridge with flour mixture. Heat oil and butter in a large skillet on medium-high heat.
- Add partridge pieces and "stir-fry" just until pinkness is gone, about 5 minutes.
- Stir in sweet and sour sauce.
- Serve with rice.
