Pumpkin Protein Bars

  1. Mix together protein powder, oat bran, wheat flour, wheat germ and salt.
  2. In a separate large bowl mix together: sugar, tofu, pumpkin, applesauce, apple juice, eggs, and cinnamon.
  3. Thoroughly combine the two mixtures.
  4. Mix in some dried fruit if you wish.
  5. I like craisins.
  6. Spread batter into a well greased 9x13-inch baking dish.
  7. Bake for 35 minutes at 350F
  8. Cool completely and cut into 16 squares.
  9. Keep refrigerated.
  10. Enjoy!
