Coconut Curry with Shrimp

  1. In a large pan, heat the oil and sweat the onion and garlic for a few minutes.
  2. Add the chile and curry powder and cook on low for another few minutes.
  3. Add the shrimp and cover with the coconut milk.
  4. Cook for 10 minutes.
  5. Stir in the lime juice and coconut.
  6. Taste and season, and when you are ready to serve, cover with the cilantro.
