Butternut Squash and Apple Soup

  1. Note: (squash and apple should be at a 3 to 1 ratio).
  2. Combine butter, onion, celery, and carrot in large saucepan.
  3. Cook for 5 minutes.
  4. Add squash, apple, and broth.
  5. Bring to boil.
  6. Simmer for 10 minutes or until squash is soft.
  7. Puree.
  8. Add spices to taste.
