Broiled Lemon Chicken Sandwiches With Garlic Mayonnaise
- 3 large cloves garlic (skin on)
- 1/4 c. low-fat mayonnaise
- 1 tsp. finely grated lemon zest
- fresh ground black pepper to taste
- 2 small skinless, boneless chicken breasts
- 2 tsp. olive oil
- 4 Tbsp. fresh lemon juice
- salt and pepper to taste
- 4 buns or Kaiser rolls
- 8 leaves Boston or bibb lettuce
- Place garlic in small saucepan.
- Cover with water and bring to a boil.
- Reduce heat.
- Cook for 25 minutes.
- Drain; slip skins off. Mash and mix with mayonnaise, lemon zest and pepper.
- Refrigerate until ready to use.
- Preheat broil or ready outdoor grill.
- Cut breasts in half lengthwise, removing center cartilage.
- Fan out the little fillet on the underside of each breast and lay flat on baking sheet.
