Fresh Tomato Basil Tart
- 1 ready-to-use pie crust
- 6 medium size firm tomatoes, sliced thin
- 2 Tbsp. olive oil
- 1/3 c. Dijon mustard
- 1 lb. sliced Mozzarella
- 1 Tbsp. chopped garlic
- 1 Tbsp. fresh basil or any other herb or herbs
- salt and pepper to taste
- Spread pie crust in 10-inch tart pan.
- Preheat oven to 400u0b0. Evenly brush mustard over the bottom of pastry.
- Top the mustard with all the Mozzarella slices, covering the bottom.
- Starting at the outer edge of shell, make a layered overlapping row of tomato slices.
- Make a second row and continue until top is covered. Sprinkle herbs and garlic evenly over top.
- Season to taste with salt and pepper.
- Drizzle oil evenly on top.
- Put tart on baking sheet and bake at 400u0b0 for 40 minutes.
