Southern Chicken Stew Recipe
- 1 whole chicken, or possibly several boneless, skinless breasts
- salt and pepper to taste
- butter
- flour
- lowfat milk
- 1 can chicken broth
- Texas Pete warm sauce
- Parboil chicken in water till tender (usually about 2 hrs).
- If using whole chicken, break meat into bite-size pcs and strain all bones, fat, and skin from soup.
- Reduce heat and make "thickening"- mix flour, lowfat milk, salt and pepper together till lumps disappear.
- Mix thickening with soup and stir well.
- Add in Texas Pete or possibly other warm sauce to taste.
- Fold in chicken broth and reheat till bubbly.
- In North Carolina, we serve with cole slaw and rice or possibly grilled cheese sandwiches!
