Swiss Fruit Bread
- 3/4 c. chopped dried pears
- 1/2 c. chopped pitted prunes
- 1/2 c. mixed dried fruits
- 1/4 c. grape juice
- 2 c. flour
- 2 pkg. dry yeast
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1 c. milk
- 1/2 c. butter
- 1/4 c. sugar
- 1 tsp. salt
- 2 eggs
- 2 tsp. orange peel
- 1/2 c. walnuts
- 2 to 2 1/2 c. flour
- Soak dried fruit in juice several hours.
- In a large mixer bowl, stir flour, yeast and spices.
- Heat milk, butter, sugar and salt to warm (to 120u0b0).
- Add to dry mixture.
- Add eggs and shredded orange peel.
- Beat with mixer on low speed.
- Beat 3 minutes on high speed.
- Stir in fruit mixture, walnuts and 2 to 2 1/2 cups flour to make soft dough.
- Knead 8 to 10 minutes.
- Use dough hook.
- Shape in ball.
- Place in greased bowl.
- Let rise until double.
- Shape in 2 loaves.
- Let rise 60 minutes.
- Bake in a 375u0b0 oven for 35 minutes.
