Linda'S Chicken Perlan(A Version Of Recipe By Regina Ashby)

  1. In a large cast-iron pan, coated with cooking spray, saute onions and bell peppers.
  2. In a frying pan, cook the bacon and brown the pieces of sausage. Add cooked bacon and sausage to pot with onions and bell peppers.
  3. Add 2 Cornish hens and enough water to cover.
  4. Cook covered on medium until hens are done (about 2 to 2 1/2 hours).
  5. Remove hens and debone.
  6. Return hens to pot, add rice and more water if needed, let cook about 45 minutes to an hour, stirring occasionally until rice is done.
  7. Remove lid, stir and continue cooking until liquid is absorbed to your liking; careful not to absorb too much.
  8. Great for a winter meal.
