Citrus Coconut Breading

  1. In a bowl, combine panko, coconut, ginger, garlic, lime, lemon and orange zests with their juices.
  2. Spread coconut mixture on a sheet pan and let it dry, about an hour or more.
  3. Use this breading for any meat dish of your choice: chicken breasts, chicken tenders, fish, boneless pork loins, fish, etc.
