Muffin Surprise

  1. Preheat oven to 425u0b0.
  2. Grease muffin pan.
  3. Sift flour, baking powder and salt into large bowl.
  4. Stir in oat bran and brown sugar; set aside.
  5. In small bowl, combine milk, oil, eggs and vanilla. Stir mixture into dry ingredients just until moistened.
  6. Cut cream cheese into 12 equal pieces.
  7. Spoon about 1/2 of batter into muffin cups, filling 1/2 full.
  8. Spoon 1 tablespoon of jam on top of batter.
  9. Top with 1 piece of cream cheese.
  10. Spoon remaining batter over jam and cheese, filling each cup 2/3 full.
  11. Bake 14 to 16 minutes or until brown.
