Ladybirds Lunchtime BBQ Bacon Rolls
- 2 fresh long bread rolls
- 8 slice of short cut bacon
- 4 ripe red tomatoes
- 1 red onion
- 1 dozen small basil leaves
- 4 -8 slices of cheese of your choice
- 1 olive oil
- 1 drizzle of balsamic vinegar
- 1 pinch salt
- 1 pinch cracked black pepper
- 1 butter
- Lightly oil and Heat your BBQ hot plate or frying pan or grill to hot .
- place the short cut bacon pieces onto the BBQ hot plate , etc , and season them with salt and cracked black pepper and cook for about 5 minutes either side or until cooked to your liking .
- peel and dice the red onion then place them onto the hot plate and season with pepper and cook , tossing every couple minutes , till soft and lightly Caramelised .
- slice the tomatoes into rounds and place them onto the hot plate and then drizzle them with a little olive oil and A little bolsamic vinegar and season with salt and cracked black pepper and leave to cook for a couple minutes then turn and cook for a few minutes more , until soft and lightly Caramelised .
- roughly chop the basil up and add it to the cooked tomatoes and mix to combine .
- cut the rolls in half and butter top and bottom of inners of the rolls .
- slice your cheese into thin slices and place them evenly over the top half of the buttered rolls .
- place 4 pieces of your cooked bacon even onto each of the bottom of the butter rolls and then add some of if cooked onions ontop of the bacon followed by half the cooked tomatoes mixed with the basil ontop , close the roll top .
- serve hot and enjoy .
