Easy Shrimp And Chicken Creole Recipe
- 2 boneless chicken breasts (1 lb.) cut into 3 inch long strips
- 1 pound shelled raw shrimp
- 3/4 c. minced onion
- 1 c. minced celery
- 3/4 c. minced bell pepper
- 1 c. sliced mushrooms
- 1 stick butter
- 4 c. minced fresh tomatoes, scalded and skinned
- 1/3 c. minced parsley
- 1 clove garlic, chopped
- 1/3 c. dry white wine
- 1/4 teaspoon sugar
- 3 teaspoon Gumbo File'
- Salt and pepper to taste
- Saute/fry onions, celery, peppers, garlic and chicken in butter for 5 min over low heat.
- Add in tomatoes, wine, mushrooms, sugar, Gumbo File and parsley.
- Simmer for 25 min covered.
- Add in shrimp and simmer till shrimp turns pink, about 5 min.
- Salt and pepper to taste.
- Serve over rice.
- Serves 8.
