Philly Crepes with a Warm Strawberry Sauce

  1. Combine the milk, sugar, custard powder and vanilla, and whisk over a medium heat until custard boils and thickens.
  2. Cover and allow to cool.
  3. Beat the cold custard until smooth.
  4. Gradually add the Philly* and beat until smooth.
  5. Stir through the strawberries, and refrigerate until required.
  6. Whisk together the milk, eggs and flour until smooth.
  7. Pour 1/4 cup measures into a small lightly oiled pre-heated frying pan.
  8. Cook for 1-2 minutes each side until golden.
  9. Bring the water and sugar to the boil in a saucepan.
  10. Add 3/4 of the strawberries, simmer for 2-3 minutes.
  11. Remove from heat and puree.
  12. Stir through the orange essence, allow to cool.
  13. Place a spoonful of custard into each crepe, top with remaining strawberries and roll or fold over.
  14. Drizzle with sauce and serve immediately.
  15. Tip: Make custard and crepes in advance.
  16. Reheat crepes in the microwave.
