Philly Crepes with a Warm Strawberry Sauce
- Custard
- 350ml milk
- 1/2 cup caster sugar
- 1/4 cup custard powder
- 2 teaspoons vanilla essence
- 250g block PHILADELPHIA Cream Cheese, softened
- 125g strawberries, hulled and quartered Safeway 1 lb For $3.99 thru 02/09
- Crepes
- 1 1/2 cups milk
- 2 eggs
- 1 cup plain flour
- Strawberry Sauce
- 1/4 cup caster sugar
- 1/4 cup water
- 250g strawberries, hulled and halved Safeway 1 lb For $3.99 thru 02/09
- 1 teaspoon orange essence or orange flavoured liqueur
- Combine the milk, sugar, custard powder and vanilla, and whisk over a medium heat until custard boils and thickens.
- Cover and allow to cool.
- Beat the cold custard until smooth.
- Gradually add the Philly* and beat until smooth.
- Stir through the strawberries, and refrigerate until required.
- Whisk together the milk, eggs and flour until smooth.
- Pour 1/4 cup measures into a small lightly oiled pre-heated frying pan.
- Cook for 1-2 minutes each side until golden.
- Bring the water and sugar to the boil in a saucepan.
- Add 3/4 of the strawberries, simmer for 2-3 minutes.
- Remove from heat and puree.
- Stir through the orange essence, allow to cool.
- Place a spoonful of custard into each crepe, top with remaining strawberries and roll or fold over.
- Drizzle with sauce and serve immediately.
- Tip: Make custard and crepes in advance.
- Reheat crepes in the microwave.
