Dinner Tuna Melts

  1. In a bowl, stir together mayo, celery, onion, parsley and lemon juice.
  2. Add tuna and blend with a fork.
  3. Season to taste with salt and pepper.
  4. Lightly toast muffins.
  5. Spread tuna mixture over each half, dividing equally.
  6. Place on a prepared pan and top with tomato.
  7. Top with the Cheddar.
  8. Bake at 400 for 5-10 minutes, until cheese melts.
