Dinner Tuna Melts
- 2 tablespoons mayonnaise
- 2 tablespoons finely diced celery
- 1 tablespoon finely chopped onion
- 1 teaspoon finely chopped parsley
- 12 teaspoon lemon juice
- 1 (6 ounce) can tuna, drained and broken into chunks
- salt and pepper
- 2 English muffins, split
- 4 thin slices tomatoes
- 4 slices cheddar cheese
- In a bowl, stir together mayo, celery, onion, parsley and lemon juice.
- Add tuna and blend with a fork.
- Season to taste with salt and pepper.
- Lightly toast muffins.
- Spread tuna mixture over each half, dividing equally.
- Place on a prepared pan and top with tomato.
- Top with the Cheddar.
- Bake at 400 for 5-10 minutes, until cheese melts.
