Emily's Green Tomato Chow chow

  1. Combine vegtables; sprinkle with salt.
  2. Let stand 4-6 hours in a cool place.
  3. Drain.
  4. Rinse and drain again.
  5. Combine sugar and spices and vinegar in large saucepan.
  6. Simmer 10 min.
  7. Add veggies; simmer additional 10 min.
  8. Bring to a boil.
  9. Pack hot relish into hot jars, leaving 1/4 inch headspace.
  10. Adjust two piece caps.
  11. Process 10 minutes in a boiling-water canner.
