Chinese-Style Beef And Vegetables

  1. In small bowl, blend Italian dressing, soy sauce and ginger; reserve 2 tablespoons.
  2. In large skillet, heat remaining dressing mixture and cook carrots, covered, over medium heat, stirring occasionally, 10 minutes.
  3. Add mushrooms and zucchini and cook covered an additional 5 minutes.
  4. Remove vegetables and keep warm. Add reserved dressing mixture to skillet, then add beef.
  5. Cook uncovered over high heat, stirring constantly, 5 minutes or until beef is done.
  6. Return vegetables to skillet and heat through.
  7. To serve, arrange beef and vegetables over hot rice.
