Plum Cake
- 4 c. flour
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 c. scalded milk
- 1/2 c. butter or margarine
- 2 eggs
- 1 pkg. active dry yeast
- 1/4 c. warm water
- 2 Tbsp. salad oil
- 1 tsp. vanilla
- prune plums
- Dissolve yeast in 1/4 cup warm water.
- Sift together dry ingredients.
- Slowly add milk, eggs and shortening.
- Beat well. Add salad oil, vanilla and yeast mixture.
- Beat until dough comes off bottom of bowl.
- Knead until smooth and elastic.
- Place in a greased bowl and let rise until doubled.
- Punch down dough and roll out.
- Place on cookie sheet (same size as dough).
- Cut each plum in half and slit into quarters.
- Be generous with plums. Sprinkle with sugar and bake at 350u0b0 for 30 minutes.
