Herby Potato Corn Chowder
- 1 vidalia onion (small-med)
- 4 idaho potatoes, peeled and cut in squares
- 1 (15 1/4 ounce) can corn
- 1 tablespoon parsley
- 1 tablespoon basil
- 1 tablespoon chives
- 1 tablespoon marjoram
- 12 teaspoon paprika
- 12 teaspoon cumin
- 1 teaspoon celery salt
- 1 12 organic Swanson chicken broth (box)
- 1 12 cups heavy cream
- salt and pepper
- chop onion and potatoes and place in pot on med heat until potatoes soft.
- add all chicken broth - simmer for 10 minute.
- add all herbs, spices, and corn.
- after 10 min, place 1/3 of soup into blender - pour back into pot.
- add heavy cream 10-15 min before serving - stir well.
