Stir-fried Green Eggplants
- 250 g green eggplant
- 1 medium size red onion
- 2 green chilies
- 1/2 teaspoon turmeric
- 1/4 teaspoon red chill powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin seeds
- to taste salt
- 2 tablespoons cooking oil
- In heavy base frying pan add oil.
- Let the oil heat.
- Add cumin seeds.
- Once they start to splutter add finally chopped onion.
- Once the onion is golden brown add all the ingredients except eggplant.
- Stir it for two minutes and add finally sliced green eggplants.
- Now cook it without covering it on lower heat.
- Make sure that you do whole cooking on medium heat.
- Once the oil starts to separate that means the dish is ready.
- Stir it gently.
