Stir-fried Green Eggplants

  1. In heavy base frying pan add oil.
  2. Let the oil heat.
  3. Add cumin seeds.
  4. Once they start to splutter add finally chopped onion.
  5. Once the onion is golden brown add all the ingredients except eggplant.
  6. Stir it for two minutes and add finally sliced green eggplants.
  7. Now cook it without covering it on lower heat.
  8. Make sure that you do whole cooking on medium heat.
  9. Once the oil starts to separate that means the dish is ready.
  10. Stir it gently.
