South Of The Border Chicken Bake
- 1/2 c. creamed cottage cheese
- 1 (3 oz.) pkg. cream cheese, softened
- 1 c. sour cream
- 1 can cream of chicken soup
- 1/2 tsp. salt
- 1/8 tsp. garlic powder
- 1 (4 oz.) can chopped green chilies
- 3 c. cooked chicken, cut into large pieces
- 3 c. cooked rice
- 1 1/2 c. shredded Monterey Jack cheese
- 1/2 c. chopped ripe olives
- 1 c. coarsely crushed corn chips
- 1/2 c. shredded Cheddar cheese
- Blend cottage cheese, cream cheese and sour cream until smooth.
- Add remaining ingredients, except corn chips and Cheddar cheese. Pour into a shallow 3-quart baking dish.
- Sprinkle with corn chips and top with Cheddar cheese.
- Bake in a preheated 350u0b0 oven for 25 to 30 minutes.
- Serves 8 to 10.
