Cormac's quick brown bread.
- 175 grams extra course wholemeal
- 50 grams plain flour
- 25 grams bran
- 25 grams pinhead oatmeal
- 25 grams wheatgerm
- 1 tsp sugar
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 275 ml buttermilk
- 1 egg
- Mix all dry ingredients in a bowl with a wooden spoon.
- Beat the egg in with the buttermilk and add to dry ingredients mixing well.
- Place dough into a 2lb tin lined with parchment paper... creating a slight hollow down the centre of the wet mix.
- Bake in pre heated oven at 190c for 40 minutes.. (test with skewer.. if dough sticks to skewer.. cook more), and turn out onto a wire rack to cool.
