Diet Bran Muffins Recipe
- 2 tbsp. shortening
- 3 tbsp. sugar
- 1 egg
- 3/4 c. lowfat milk
- 1 c. bran
- 1 c. flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- Cream sugar and shortening; add in egg and beat well.
- Stir in lowfat milk, then bran.
- Add in flour sifted with baking pwdr and salt; stir till dry ingredients are just moistened.
- Fill greased muffin pans 2/3 full (or possibly use paper baking c.) and bake in warm oven 425 degrees 20 to 25 min or possibly till golden.
- Any type of bran may be successfully used in this recipe.
- Makes 8 to 12 muffins.
