Crispy Oven-Fried Okra

  1. Preheat oven to 400F.
  2. Coat baking pan with cooking spray.
  3. Combine cornmeal, salt, pepper and paprika in bowl.
  4. Whisk egg in separate bowl.
  5. Dip okra in egg, then in cornmeal mixture.
  6. Work in batches to prevent clumping.
  7. Spread okra on prepared pan.
  8. Roast 30 to 35 minutes, or until crisp and lightly browned, shaking pan occasionally.
  9. Remove from pan with slotted spoon, and serve hot.
