Key Lime Bars
- 1 1/4 cups all-purpose flour
- 1/2 cup Land O Lakes Butter, softened
- 1/4 cup sugar
- 1/4 cup finely chopped pecans
- 3/4 cup sugar
- 2 Land O Lakes Eggs
- 2 tablespoons all-purpose flour
- 3 tablespoons fresh Key lime juice*
- 1/4 teaspoon baking powder
- 1 1/2 cups powdered sugar
- 1 tablespoon Land O Lakes Butter, softened
- 2 to 3 tablespoons fresh key lime juice*
- Freshly grated Key lime zest
- Heat oven to 350F.
- Combine all crust ingredients except pecans in bowl.
- Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs.
- Stir in pecans.
- Press onto bottom of ungreased 8- or 9-inch square baking pan.
- Bake 15-20 minutes or until edges are lightly browned.
- Combine all filling ingredients in bowl.
- Beat at low speed until well mixed.
- Pour filling over hot, partially baked crust.
- Continue baking 18-20 minutes or until filling is set.
- Cool completely.
- Combine all frosting ingredients except lime zest in bowl.
- Spread over cooled bars.
- Garnish with grated lime zest.
- Store refrigerated.
