Chicken Wings with Mango Mojito BBQ Sauce Recipe gayot

  1. Combine all of the ingredients, except the rum, in a saucepot and bring to a simmer over low heat.
  2. Cook for 5 minutes to melt the sugar.
  3. Remove from the heat, add the rum and let cool.
  4. Preheat the oven to 450 F. Toss the wings with salt and pepper.
  5. Line a large casserole dish with aluminum foil and spread the wings in a single layer in the pan.
  6. Roast the wings for 20 to 25 minutes, or until cooked through.
  7. Remove the wings from the oven and preheat the broiler to high.
  8. Pour half of the prepared sauce into the pan and toss the wings to coat.
  9. Broil the wings for 3 minutes or until golden brown, then turn the wings over and broil 2 minutes more.
  10. Brush the wings with additional sauce again before serving and serve remaining sauce alongside for dipping.
  11. Be sure to bring the marinade to a full rolling boil for one minute before serving it as a dipping sauce.
