Beef And Vegetable Cobbler
- 2 lbs. beef, cut into 1 - inch pieces
- 1/4 c. all-purpose flour
- 1/4 c. olive oil
- 1 lb. mushrooms, halved or quartered
- 3 cloves garlic, chopped
- 1 can (14.5 oz.) beef broth
- Salt and black pepper
- 1 egg, beaten
- 1/4 c. milk
- 1 1/2 c. instant baking mix
- 2 T. chopped chives
- Sesame and poppy seeds
- 1 pkg. (1 lb.) frozen vegetables
- 1 large tomato, diced
- Toss meat in flour until coated; reserve leftover flour. Heat oil in a heavy pot over medium heat; brown meat, a few pieces at a time.
- Add mushrooms and garlic; cook, stirring constantly, about 1 minute.
- Stir in reserved flour and beef broth.
- Bring to a boil; cover and simmer over low heat for 25 minutes.
- Add salt and pepper to taste.
